Plant-based meat products are experiencing an exponential increase in demand due to consumers concerns regarding environmental issues and health aspects. These products are an alternative to animal-based meat. Both are composed of protein, fat, vitamins, minerals, and water. 

Plant-based meat looks, cooks, and tastes like conventional meat and compared to conventional animal-based meat they have a reduced content of saturated fats, and a higher content of fibers and vitamins.

Plant-based products have significant and well-documented environmental benefits. Recent studies found that meat farming is responsible for the majority of all greenhouse gas emissions from the worldwide food sector. When compared to the production of conventional meat products, the production of plant-based meat products produces up to 90% fewer greenhouse gases, uses less than a quarter of the agricultural land, and uses 95% less water.

However, plant based meat alternatives also have various problems regarding its safety and quality. The most significant problem in plant based meat is the accelerated oxidation which results in rancidity and off-flavour. The other major issues of plant based meat alternatives include the microbial load and colour deterioration.
